Recipe: Dinner Rolls Italiano


I wanted to share one of my family's favorite recipes.  I brought these to a wonderful dinner that one of my husband's co-workers made (thanks Tammy!).  Everyone likes these rolls so much that they all requested the recipe.  I got this recipe from a dear friend while I was at WSU-it was from her neighbor who was an Italian lady who loved to cook.  The best part of this recipe is that it only takes an hour to assemble, rise and bake. 

One Hour Dinner Rolls Italiano

4 cups flour
2 pkgs. yeast
2T sugar
2t garlic salt
1t Italian seasoning

1/2c water
2T margarine or butter
1 egg, beaten
1/2c grated parmesan cheese

For the top of rolls:
2T margarine or butter
1/4c grated parmesan cheese

Mix first five ingredients in a large bowl.  In a separate microwaveable bowl, add milk, water and butter.  Heat until the mixture is as warm as baby bottle temp.  Butter does not have to melt.  Add egg to liquid mixture.  Add liquid mixture to the dry mixture.  Add cheese.  Mix.  Kneed for a couple of minutes.  Add more flour if needed-till not sticky.  Let dough rise, covered, in a warm place for 15 minutes (I like to turn my oven on its lowest setting for about 3 minutes then turn it off to create a little proof box).  When you take out the dough, punch it down and divide it into 16 pieces.  Form the pieces into balls and dip into the 2T of melted butter and then dip into parmesan and place into a greased 9x13 pan.  Cover and let rise in the oven for 10 minutes.  Remove cover.  With rolls still in oven, turn on and heat to 375 and bake for 20-25 minutes, or till lightly browned.
